  Winter Special Snacks: Gajar Ka Halwa Gajar ka halwa is a carrot-based sweet dessert pudding from the Indian subcontinent. Peanuts The peanut is also known as the groundnut and Moong phali in urdu.  It is widely grown in the tropics and subtropics, being important to both small and large commercial producers. Gajak Gajak is a dessert. It is a dry sweet made of sesame seeds or peanuts and jaggery.. The til is cooked in the raw sugar syrup or jaggery and set in thin layers, which can be stored for months.

Ingredients: 1 kg meat (make thin log slices and take out all fats) 1/2 cup fried onions (crushed) 125 gm yogurt 1 cup boiled onion paste 1 tbsp poppy seed powder 2-3 tbsp papaya paste 2 tbsp red pepper powder 1 tbsp cumin powder 1 tsp black pepper powder 2/3 tbsp hot mix(Garam masala) 1/4 tbsp nutmeg and mace powder 3 tbsp ginger paste 1/2 cup mustard oil Procedure: 1. Take a deep sauce pan and marinate beep slices in the above mentioned ingredients and leave it for at least 3 hrs. until meat become tender so that it can easily break by pressing fingers. 2. When the meat slices become tender insert them in iron bbq skewers. The right way to insert each slice is to take a long slice and fold it to double (length wise) and then insert it in stick from one corner, then insert from middle and at the insert other corner, so a 3-4 inch beef slice is inserted in skewer from three points and hence it would not break or drop from the skewer during bbq. Ingredients: Boneless Chicken (cubes) 500 g Gram Flour (Besan) 2 tbsp Rice Flour 2 tbsp Corn Flour 2 tbsp Plain Flour 2 tbsp Chopped Red Chilli 1 tsp Chopped Coriander Seeds 1 tsp Roasted Chopped White Cumin Seeds 1 tsp Salt 1 tsp Turmeric 1/2 tsp Egg 1 Finely Chopped Onion Half Cup for half kg Finely Chopped Coriander Leaves (Hara Dhania) 1 tbsp Finely Chopped Green Chillies 2 or 3 Method: 1. Put gram flour, rice flour, corn flour and plain flour in a bowl. 2. Then add chopped red chilly & chopped coriander seeds. 3. Add white cumin seeds and salt in the above mixture. 4. Add turmeric and then add egg. 5. Mix all the ingredients. 6. Add the finely chopped onion, green chili and coriander leaves. 7. Mix well. 8. Now add the chicken pieces in the mixture. 9. Deep fry every piece in low flame. 10. Tip: If the mixture is not coating the chicken pieces , add 1 - 2 tablespoon water.

Ingredients:- Mutton or Beef or Lamb: 1 ½ kilograms Wheat Grains: ½ kilograms (crushed and soaked in water for 1 ½ hour) Lentils: 1 cup (soaked and boiled) Onions : 3 medium (thinly sliced) Garlic Paste:1 tbsp (Pisa Lehsan) Ginger Paste:1 tbsp(Pisi Adrak) Garam Masala Powder: 1 tsp Red Chilli Powder:2 tbsp(Pisi Lal Mirch) Coriander Powder:1 ½ tbsp(Pisa Dhania) Turmeric Powder:1 tsp(Pisi Haldi) Salt: to taste A pinch of Soda any Clarified Butter or (Ghee): 1 ½ cup Ingrediants For Garnishing:- Fresh Mint Leaves (Podina): 1 bunch (finely chopped) Fresh Coriander Leaves (Hara Dhania): 1 bunch (finely chopped) Green Chilli (Hari Mirch) (finely chopped - to taste) Cumin Seeds (Sufaid Zeera): 1 tsp (roasted and ground) Garam Masala Powder: 1 tsp Ginger (Adrak): 2 medium size pieces Onion (thinly sliced): 1 large Lemons: 4 (cut in quarters) Any Clarified Butter or (Ghee): 2 cups METHOD:- 1. Seekh Kabab

Ingredients:- Beef/chicken/mutton 1 kg small thin cubes Garlic paste 1 table spoon Ginger paste 1 table spoon Raw papaya with skin 1 cup finely sliced/(200g) Ghee 1/2 cup /(75g) for basting Tikka seekh kabab masala 1 packet METHOD:- Mix tikka seekh kabab masala in half a cup of water. Add garlic,ginger,raw papaya and apply to meat. Leave it to marinate for 3-4 hours. Then remove the raw papaya slice. Sew the meat into the thin round/flat skewer. Place on very low heat of coal/gas fire. Grill untill very lightly brown. Brush the meat with ghee and rotate the skewer to grill evenly on all sides until tender. NOTE:- Serve 6-8 persons.
