Gajar ka Halwa



Ingredients:

Carrots (peeled & coarsely/ Cheel ker Kadukash ker lain) 1 Kg.
Milk 2 Litres.
Sugar to taste,
Coroli corn oil 1/2 Cup.
20 Blanched Almonds{BADAM}.(cut into slices).
10 pistachio Nuts (cut into silvers).
Khoya 1 Cup,
10 Green Raisins{KISHMISH},
6 Green Cardamom {ELAICHI} (Crushed).

Method:

put grated carrots in a heavy-based large pan,
simmer with milk, Pan uncovered for 2 hours.
Keep stirring and scrapping the pan till nearly
all the milk has evaporates.
Add Coroli oil, pistachios, Almonds, Raisins and Caramom seed powder.
Keep stirring till oil seprates from carrots. Fry Khoya in one spoon oil and mix with Halwa.
Dress Halwa with pistachios & Almonds before serving.
